Ground Turkey Stuffed Bell Peppers

Bake an easy-to-make, better-for-you hearty meal for the whole family with our very own Claudia M.’s ground turkey stuffed bell peppers recipe.


4-6 red bell peppers, tops cut, stemmed and seeded
3 cups cooked brown rice
1 cup corn
½ cup low-sodium canned black beans, drained and rinsed
½ cup diced tomatoes
½ cup pepper jack cheese
3 tbsp chopped fresh cilantro leaves
1 tsp cumin
1 clove minced garlic
½ tsp chili powder
Pepper, to taste
SALT FOR LIFE® 75, to taste

YIELDS:  4-6 servings


Pre-heat oven to 350 degrees and line baking dish with parchment paper

1. Cook ground turkey in a large pot and season with SALT FOR LIFE® 75 and pepper to taste.

2. Turn off oven. Add brown rice, corn, beans, tomatoes, pepper jack cheese, cilantro, cumin, garlic, chili powder and SALT FOR LIFE® 75 and pepper to pot. Mix well.

3. Fill each red bell pepper with mixture.

4. Place peppers on baking dish, cavity side up and bake for 25-30 minutes.  

5. Serve immediately.
