Southwest Quinoa Salad

Pleasing to the eyes & taste buds! Mallory S. shares her Southwest Quinoa Salad full of color and flavor.

INGREDIENTS

1 cup cooked quinoa
1 15 oz. can low-sodium black beans drained and rinsed
1 15 oz. can corn drained
1/3 cup cilantro diced
2/3 cup cherry tomatoes halved
1 avocado diced
1 small red bell pepper diced
1 medium red onion diced
1 tsp ground cumin
1/3 cup olive oil
Juice of 3 limes
1/2 tsp cayenne pepper (optional)
1 tsp SALT FOR LIFE® 75

YIELDS:  Serves 2-4

DIRECTIONS

  1.  In a small bowl, whisk together cumin, olive oil, limes, cayenne pepper and SALT FOR LIFE® 75
  2.  In a larger bowl, combine quinoa, black beans, corn, cilantro, tomatoes, avocado, red bell pepper and red onion
  3.  Pour dressing from step 1 into larger bowl and toss to combine
