Tomato Basil Soup

This Tomato Basil Soup hits the spot for a light supper.  It will entice you to plant a little basil in your garden this spring.

INGREDIENTS

1 tablespoon olive oil
1 small onion, chopped ( about ½ cup)
1 clove garlic, finely chopped
2 teaspoons granulated sugar
1 teaspoon  SALT FOR LIFE® 75
1/4 teaspoon ground black pepper
1 can (28 oz.) tomato puree, no salt added
1 ½ cups chicken stock, unsalted
5 basil leaves, chopped
1 tablespoon butter, unsalted

YIELDS: 4 servings, 1 cup serving size

DIRECTIONS

1. Heat olive oil in medium saucepan over medium-high heat. Add onion, cook about 2 to 3 minutes until softened
2. Stir in garlic, sugar, SALT FOR LIFE® 75 and pepper. Cook 3 minutes or until onions are translucent
3. Add tomato puree and chicken stock. Cook about 5 minutes
4. Add basil and butter. Stir until butter has melted. Simmer 10 minutes to develop flavor
